Laser Tag


Kayden turns six in two weeks! Since his birthday is in the winter there is not a whole lot of stuff for boys to do, besides bowling really.......Sooooo (Im probably nuts for this) BUT Derek and I are taking 6 boys over to Terre Haute to XTreme laser tag. They get to play for two hours, and have pizza and cake. Kayden is SUPER excited about this. This is his first time really having other kids besides his cousins go and do something. So he cannot wait! I will def. post pictures of the party! It should be fun!!

Wine Covers



We are starting to get some of the small piddly stuff out of the way for the wedding. Ashley designed these wine covers for me for the wine buffet! Arent they cute!! She is awesome! She is going to put these on silver cardstock paper! Love it!!!!

Day before Thanksgiving

I know most of you have heard about the Turkey story! BUT for those of you who havent. I had a horrible day Wednesday! Let's See! To start off I got up an hour early to start the brining process for the first turkey ive EVER made. Everything went very smooth. It was time to leave so I put the big dutch oven of the brining solution into the fridge to cool and then Derek was going to go tehre and pour it onto the turkey. Everything was great! Kayden and I left the house at 7. At 8:15 I get a call from Derek going "BALLISTIC" that he spilled all of the brining solution everywhere it was a mess blah blah blah.....so needless to say the floor got brined that morning! SO! I was so upset. I ordered the brining from a special store followed the pioneer womans steps and so now all day Wednesday I had to find a brining recipe. Needless to say my 14.00 brining episode turned into 40.00 becasue I had to buy all of the seasonings seperate! UGH! It was crazy busy at work I was by myself that day! THEN on the way home I get pulled over and get TWO warnings! Yes 2! I was in huge path of cars and THEY ALL were speeding and i was in the middle! He pulls me over and said I stuck out like a soar thumb because i had a head light out! FINALLY I got home, started the brining process all over again. This was my first time making a turkey. I shoved apples, cinnamon sticks, rosemary, sage, all kinds of crap in that turkey. Taking it out of the roaster it looked like it puked a christmas tree up haha, with the rosemary sprigs and everything! Needless to say everyone loved the turkey! and they all gave Derek alot of crap about not touching anything in the kitchen that day! haha! The turkey turned out! NEXT YEAR ILL TRY THE PIONEER WOMANS BRINING RECIPE!

IKEA




I am so very excited! FINALLY I get to go to IKEA! When we were building the house we had planned on going the week I took off to move in, but we were behind schedule a little bit, so we decided to wait! So we finally have it in the plans to go in December. We are going to go and stay the night and go to the mall and all of the other fun stores around Ikea! I cannot wait!! WOO HOO Dec. 12th cannot get here fast enough!!

ShotGun Season

This is the weekend all of the guys have been waiting for! AND girls too! BUT not for the same reason! All the guys are at deer camp and the girls SHOPPING!! Its pretty sad taht ttown doesnt have school today because so many kids are absent anyways, so its an offical holiday at ttown school! Kayden was SUPER excited today because his dad is taking him hunting. He has his gear on and is ready to go! He's only 5 and he is as bad as the adults with hunting! He knows he has to wait until he is 9 to take the hunter safety course and gets to go himself! Soooo I have a few years haha.....Here is a picture of him all decked out this morning right before going into daycare! His dads picking him up to go this afternoon! Good luck!


Brining a Turkey



Since the house is done and we have a basement now, we decided to have everyone over for Thanksgiving. This is the FIRST time ive EVER made a turkey before! (We may all be having frozen tv dinners) haha I am going all out! I am going to BRINE a turkey the day before and then cook it. Since I have my whole family addicted to the pioneer woman I got the recipe from her. I bought the brining from Sonoma Williams andd the whole shi bang! My mom didnt even know what brining meant! haha.....Ill let you know how it turns out!

Brining a TurkeyOct. 24, 2007
Living on a busy, action-packed cattle ranch with a husband and four kids, I have very little tolerance for unnecessary steps when it comes to cooking. Especially at Thanksgiving, I’m always looking for shortcuts and steps to cut out so I can get the food cooked in as little time as possible. The men get really hungry around here and it gives me a nervous twitch when they start hovering around the stove.
There was a time when I’d lumped brining a Thanksgiving turkey into the category of “Unnecessary Cooking Steps”—that is, until I actually pushed myself to try it one year over five years ago. And as soon as I took the first bite of that turkey, I felt a wash a shame and guilt come over my body. It was so succulent, so flavorful, so delicious, I scolded and spanked and flogged myself for being so close-minded and short-sighted and lazy and dumb and messy and disheveled, but some of those things are outside the scope of this cooking post.
Brining a turkey, folks. It may sound intimidating and labor-intensive, but it’s really not. The concept of brining involves submerging a piece of meat in a salt-water solution for several hours before cooking. While volumes and volumes of scientific data do exist that support and explain the process of brining, I’m not going to outline them all here. First of all, I don’t really understand all that stuff. Second of all, I don’t really care WHY it works; I just know it DOES work and I’ll never, ever cook a Thanksgiving turkey without brining it again.
Okay, I’ll try to explain it. Soaking the turkey in an aromatic solution of salt water, herbs, and spices not only infuses the meat with a subtle (but definitely not overpowering) hint of flavor, it also affects the molecular structure of the meat. A turkey that has been brined before cooking will be juicier, more tender, and much less prone to drying out. Bottom line.
After using a couple of different recipes for brining solutions, three years ago I began using a brining solutions sold by Williams Sonoma. I’ve used it ever since. The combination of spices and herbs is really yummy and I’ve just found it’s easier to spend $16 on a jar than dig around my spice cabinet trying to find all the right ingredients. But making your own is a cinch, too: you simply need salt, and any aromatic spice or herb you like: rosemary leaves, bay leaves, etc. Williams Sonoma’s brine contains sea salt, dried apples, juniper berries, lemon peel, garlic, rosemary, thyme, black pepper, and bay leaf.
Let’s brine a turkey together, shall we?

The Cast of Characters: One Turkey, Brining Spices, Brining Bags (optional; can also use a large pot or bowl), and water.



Here’s a closer look at the brining spice. It’s about 1 pound of spices, so begin with about a cup-and-a-half of salt and build up your spices from there. (Or, just spend $16 at Williams Sonoma like I do. That’s only four days of Starbucks! See, that’s why I can justify buying ready-made brining spice—I don’t have a Starbucks nearby.)



The first thing we’ll do is make the brining solution, because it needs to cool before you add the turkey.



Bring one gallon of water to a boil, then open the jar of brining spice and take a whiff. Faint.



Then, when you come to, pour the spices into the boiling water. Stir to dissolve…



Then remove from heat, cool to room temperature, and refrigerate until cold. Or, if you’re like me and don’t like waiting, place the hot pot in a large bowl of ice, stirring to cool. Pour off the water as the ice melts and keep adding more ice…and within about five minutes, the solution is cold. Have I mentioned I hate waiting?



Now, let’s open up the turkey! It’s the easiest thing in the world. First, cut off the outer plastic netting.



Then, with a sharp knife, cut the plastic open near the metal closure.



Cue up the burlesque music, then strip all the plastic wrap from the bird.



IMPORTANT: Have you ever seen those Funniest Home Video episodes where some lady pulls the turkey out of the oven and discovers she never removed…gulp…the bags? Don’t let that happen to you.



This bag contains the turkey neck, which you’ll want to rinse and save in a Ziploc in you fridge. We’ll use that later.



Now, on the other end, you’ll notice that Butterball has very neatly trussed the turkey by neatly tucking its legs under a slit in the skin. That’s great, but it’s hard to thoroughly rinse the bird that way. So just set the legs free for awhile.



Here ya go, Tom…now you can stretch your legs for a little while.



Now, look really closely. Do you see anything that doesn’t belong?



Wheeeee! It’s another bag! I really do like this part. It’s like finding little treasures in the Epiphany cake at church when I was growing up. Sort of. This bag contains the giblets, which you also need to rinse and store in a Ziploc in the fridge. We’ll definitely need them later, too.



NOW it’s time to rinse the turkey thoroughly with cold water. Just hold the little sucker under your kitchen faucet and rinse away, lifting up the arms and legs, and getting all the crevices.



Now, I like to do the brining in one of these large Brining Bags, also sold at Williams Sonoma. But you can also use a pot or large bowl; just be sure it will fit in your fridge.



Place the turkey in the large bag…



Then pour the cool brining solution into the bag.



Get it all in there…



Then add 1 gallon of ice water on top of the brining solution.



Now seal the brining bag…



Put it in the fridge, and let it work its magic for 16-24 hours. Every now and then, turn the bag around and upside down to ensure even brining.
Now walk away, do yoga, or eat an entire package of Oreos. Then come back later and we’ll cook this sucker! That’s when the fun rrrrreally begins.

Radiology Week 2009


Nov. 8-14 is National Radiologic Technology Week (NRTW). NRTW is celebrated yearly to recognize the work of Radiologic Technologists (R.T.) across the country. The celebration coincides with the anniversary of Wilhelm Conrad Roentgen’s discovery of x-rays on Nov. 8, 1895.
NRTW was started by the American Society of Radiologic Technologists (ASRT) in 1979 to honor the work of medical imaging professionals and to increase awareness of their contributions to the health care industry. The week-long celebration calls attention to the valuable work of R.T.s in the healthcare field and to the highly technical images they produce which play an integral role in the diagnosis and treatment of millions of patients every year.
Rad Techs are highly trained and educated in fields such as diagnostic imaging, CT scan, radiation therapy, mammography, MRI, nuclear medicine, interventional radiography, fluoroscopy, sonography, cardiovascular testing and cardiac cath lab.
Radiologic Technologists must complete an accredited two-year hospital-based education program or a two or four-year college or university program and then pass an exam to become nationally registered. Rad Techs must also earn continuing education credits annually to remain certified.

Its hard to believe that I have been done with school now for 5 years! This week Nov 8 -14th is National Radiology Week. To all of you techs out there! HAPPY RADIOLOGY WEEK! All of you Techs who do such an excellent job in supporting the awesome care provided to patients. If you know any Rad Techs, please share with them how much you appreciate their dedication and hard work.

My Chrismas List

Christmas Tree




Well, Kaydens cousins stayed the night last night and so I decided ahhhh lets put the tree up and we can start to decorate it. I got a new tree Saturday at Walmart a bigger one. My other tree was only 6 foot. I thought it would look a little "small" in the new house since the living room is vaulted! So, we made pancakes for breakfast, and we put the ornaments on the tree and jammed out to christmas music! The kids had a BLAST!! Poor Renae, they probably went home and begged Renae to put up their tree too! haha Sorry Renae!!!!!!

Im in the Christmas spirit VERY EARLY this year! Well usually its ALWAYS early, but for some reasone its WAY early this year! haha It was super nice out this past weekend, so I insisted that Derek should put the lights up on the roof since it was so nice out! He was THRILLED! Let me tell ya! I think im just super excited because of the new house and Christmas is my favorite time of the year! We arent turning them on until the day after thanksgiving!!! I cant wait! They look good! We had to turn them on for a split second last night to make sure they all worked! and they did!!!! We are set!

TO DIE FOR


You've got to try this! This is one of the best cobbler/crisps ive EVER had! Here it is!!!

Enjoy this! It’s perfect for the holidays.
Pear-Cinnamon Crisp with Vanilla Ice Cream
Filling
4 to 5 large pears
2/3 cup sugar
1/4 teaspoon salt
Topping
1 1/2 cups all-purpose flour
1/3 cup sugar
1/3 cup firmly packed brown sugar
1/2 teaspoon cinnamon
1/2 cup pecans, very finely chopped ( I used the blue diamond choppedo ones in a bag)
1 stick (8 tablespoons) melted
Preheat oven to 350 degrees.
Peel, core, and dice pears. Place into a bowl and stir together with 2/3 cup sugar and 1/4 teaspoon salt. Set aside.
In a separate bowl, combine flour, sugar, brown sugar, cinnamon, and pecans. Stir together. Drizzle melted butter gradually, stirring with a fork as you go until all combined.
Pour pears into a baking dish; top with crumb topping.
Bake at 350 degrees for 30 minutes.
Place pan on top rack of oven for an additional 10 minutes, or until topping is golden brown.
Serve warm with vanilla ice cream.

Are you ready????



It seems like yesterday i was standing in line at 4AM waiting to shop shop shop!!! This is ONE of my favorite things to do in November! I think im actually addicted to Black Friday. Is that possible?? My friend and I go together every year and we plan it out. We go to Kohls first, then Wal-Mart, then Menards, then the smaller stores! My mom went with us for the first time last year and she didnt quite know what to think! haha She is letting my sister in law go this year! I cant wait!!! Wine Table



Im very happy the house is all done and now I can concentrate on all of the wedding planning. Every month I have tried to accomplish things so that 34234 things do not pile up come early summer! Derek took me to Olive Garden for my birthday and Im not a huge drinker, but they were sampling this wine. So we tried it. It was AWESOME! So I asked him where we could get it, and he said since it wasnt an exclusive to Olive Garden that we could go to any liquor store. WELL.......not ANY liquor store. I FINALLY found a store taht carried it and so all of my friends tried it and they loved it too, so we went back and got more this past weekend and she said they couldnt keep it on the shelf that they didnt think they were going to be able to get it anymore! ARE YOU KIDDING ME!?!?! Sooooooo I bought 2 cases for the wedding! I found pink plastic wine glasses and we are having a wine table! Im excited!! If you come across the wine Moscato "Castello Del Poggio" buy it!!! You will love it! Trust me on this one......

Mexico Here We Come!


At first Derek and I were not going to go on a honeymoon. We were going to just lay back at home for a few days and just relax at home after the wedding. After talking to alot of people they were like " I cannot believe your not going on a honeymoon, TRUST me you guys will regret it" So you know me, I started thinking about it and talked to Derek a few times about it, and he said to look into some places and we could think about it. So I looked into four places. Jamaica, Dominican, Bahamas, and Mexico. Derek is not a big fan of flying so he REALLY wanted to stay in the US, but have a short flight. Sooooo that was kind of tricky trying to figure a place out. I researched, and researched FOREVER! I finally put together three places and showed him all of them and FINALLY last night he decided that Riviera Maya was the place! WOO HOO!! Im super excited. Mexico was my second pick, but either way I know it will be great! We are staying at Secrets Maroma, All Inclusive Resort! Honeymoon Suite!! 8 Bars, 7 Resteraunts. Couples Massages. Im super excited! Welcome to Rydell High!!



I have been waiting for this day for a VERY long time. I was on the internet a couple of months ago looking at shows at the fox and other areas, and FINALLY they are having Grease on Broadway at the Fox. They went on sale Saturday at 1 and I got the tickets. There is 8 of us going and Im super super excited about it. The only bad part is WAITING. The show isnt until January! I cant wait!!!!

YUM! I have to share this recipe with you! My aunt Rosemary made these cookies for the family reunion on Sunday. They were SO SO good! You have to try these!!!

Wicked Awesome Cookies
Makes 6 dozen

1/2 cup butter (can use margarine)
1 1/2 cups sugar
1 1/2 cups brown sugar
4 eggs
2 1/2 tsp baking soda
2 tsp vanilla
18 oz jar creamy peanut butter
6 cups old fashioned oatmeal
12 oz bag chocolate chips

Preheat oven to 350 degress.
Cream butter, sugar, and brown sugar. Add eggs and mix. Add baking soda, vanilla, and peanut butter. (All these can be done with a hand mixer.) Then stir in, by hand, oatmeal and chocolate chips. Drop on cookie sheet. Bake 10-12 minutes until browned on tops of cookies.

CUBS VS. CARDS

This past weekend we went to the CUBS/CARDS game. Derek, Kayden, Mom, Jason, Renae, Ciara and Logan and I Went. 6 Cardinal Fans and 2 Cubs Fan, well I should say mom just opted to wear a Cubs shirt(she could care less). Kayden on the other hand is a HUGE baseball fan. He LOVES Baseball. He is a CUBBY fan though. Derek just loves loves it (pshh) haha. So I was inside getting ready and they were outside and Derek said hey come here....Derek had taken black electric tape and crossed out the cubs on kaydens shirt! It was pretty funny......

We had a great time. The cardinals won the game! On the way back my brother had road rage bad! We were in traffic for FOREVER in downtown St. Louis and then we finally started going again and in Collinsville there was backed up traffic for at least a half hour, and he was about to have a come apart. We finally made it home. All in all it was a fun day!

Back To Wedding Mode



Now that the house is done we are back to wedding mode. In my down time I have been working on the guest list, plans, getting ideas for flowers, etc. We hired the three sisters to rent the head table decor and some of the centerpieces, The three sisters just sold their business to Billi Jansen, so we met with her last week and she has some very neat ideas. I cant wait to post pictures of everything! It has been fun planning everything and seeing all of the new ideas and trends. Im SUPER SUPER excited about the Candy Buffet and Wine Table. I cant wait to post pictures of the final project! I think Derek and I have all of our wedding party selected. We are having 9 Groomsmen, 9 Bridesmaids, Junior Bridesmaid, Junior Groomsmen, 2 Bridal Assistants, 4 Ushers, 2 Ring Bears, 1 Flower Girl...I hope I didnt forget someone. It was so hard to pick between people and Derek felt the same way, but we finally did it!

THREE WEEKS FROM TODAY


THREE WEEKS FROM TODAY IS THE SEASON 5 PREMEIR OF GREY'S ANATOMY. This is my ALL TIME favorite show! I already know that George is going die which pisses me off, because I read it in a magazine, but anyways in real life Meredith is prego so she is out a few shows, and Izzie is taking a break too, so Im curious to see whats going to happen! 3 weeks from today. Since the house is done its back to WEDDING MODE! haha I know its never a dull moment. I dont think I could function if I didnt have 2324234 things going on in my life. All Moved In

Well We are ALL MOVED IN! Yeah!!!! We've been staying there for two weeks now. There are still small piddly things to do, but it will just take time. My mom and I were both off last week and we accomplished a TON of stuff. Considering we broke ground June 1st we kicked butt! Everything has gone so smooth. The only thing Derek and I got into it about was the stupid fireplace! Derek insisted we did not need a jacuzzi tub and well guess what we got one! AND....... HE WAS THE FIRST ONE IN IT! I laid down with Kayden last week and when I went to go to bed he was IN THE TUB! I was like ughhhhhh I cant believe you are in the tub! haha. So when he got out he admitted that he liked it and it was a good idea! Haha MEN! Ill post pictures soon.

Staining Trim



I HATE staining trim. Last week we stained all of the trim and then last night we started on the door casings. We are ALMOST done! Tonight we have to do all of the doors. I have been the stainer and Derek has been the wiper haha. Two of our friends helped us with the trim. I think they realized how much it sucked so Derek and I opted to just finish the rest ourselves. After we stain it and wipe it down my dad then varnishes it and then we have to sand it all AGAIN, and then he varnishes again with another coat. I came all prepared with gloves and all. My dad looked at me and goes " Stac, you might as well suck it up and dive in with your bare hands!" I was like ahhhhhh....So after last week, and tonight...I am in desperate need of a manicure!!

PAINT PAINT PAINT




I'm not such a big fan of picking out colors for a whole house from a LITTLE swatch and hoping it looks good in the entire room! My dad told me that I get one chance for the paint colors, and if I dont like it after its on the wall. IM SCREWED!! haha I know most of you know my dad and well haha lets just say I pretty much have to make sure I love it before it goes on the wall! Luckily I have loved everything so far. My brother is creative and he added stripes in the foyer. My sister in law has a yellow wall in her kitchen and them he takes a glossy paint and tapes it off and them you have glossy stripes on your wall. It looks pretty neat. So he did that in the foyer area! Ill post pictures when the painting is all done, which should be tonight!!

I really never used coupons unless I got them in the mail from Old Navy or American Eagle. My aunt Julie from Kansas was down a while back and she was telling me about this website that we needed to check out. Activity Book

I cant take credit for this because I saw it online! Thanks Jessica! BUT I altered it to fit our wedding and so this is what the kids will get at the wedding. It was actually perfect timing because school is starting now, and you can get crayons for dirt cheap at Wal-Mart. Wal-Mart was even cheaper than the dollar tree. So each child at the wedding will get a pack of small crayons and this activity book to color. I dont want to spoil the fun and show you the whole activity book but here is the front page!


Let the Painting Begin


Tuesday evening Dad and the guys started to prime the house. Can you say FAST! I got home from work at 5:15 and they had the WHOLE house done!! They are CRAZY! The primed a whole house that fast. Last night Dad and Jason painted the ceilings and the closets. TONIGHT the fun starts! The house will finally have color! I hope I like the colors once they get on the wall. Its hard picking out paint from a little swatch and then picturing it in a HUGE Room! Im crossing my fingers it will look good. Jason is going to do some neat things in the foyer and in Kaydens room, so I will post pictures when its finished! They are going to put two coats on and then Monday the floors are going to start to be laid! Its coming along! Ill post pictures of the final paint when its all done!
